Yellow corn is a variety of sweet corn.  Each ear can have up to 400 kernels. Corn is a significant source of Vitamin A and contains cartenoids which are beta carotene, the source of Vit A. So good for you! The less you cook corn, the better the sweet flavor and crisp texture. Corn can be roasted, grilled, boiled, steamed, or pureed. It pairs well with summer squash, tomatoes, basil, cilantro, cream, nutty cheeses, and fennel.
